Larkspur Restaurant & Bar in Vail, COLarkspur Restaurant & Bar in Vail, CO is a restaurant that serves contemporary American cuisine. Wine Spectator magazine has described Larkspur as "the most dynamic restaurant in Vail."
The restaurant has many star chefs and servers and managers who are equally dedicated to superior customer service. The owner of the restaurant is Thomas Salamunovich. He is an internationally trained chef. He is also a graduate and instructor of the California Culinary Academy. In 1993 he moved to Vail to become the Executive Chef of Sweet Basil. A few years later he designed and opened Zino Ristorante in Edwards. In 1999 he opened Larkspur with his wife, Nancy Sweeny. Since Larkspur opened in 1999 it has received very positive reviews from many different magazines. Eat Magazine says that the chefs "have synergy about them that transcends any one meal." Vogue Entertaining and Travel says that the restaurant's wine list must be the best in town because of the 7,500-bottle wine cellar. Larkspur has been recognized by the Distinguished Restaurants of North America as a restaurant that exemplifies culinary excellence and fine dining. The 10,000-square-foot restaurant includes a main dining area, the Mountainside Patio, and a private dining room. The Main Dining Room and Great Room has a massive hearth and a glassed-in wine room. It's border by an open kitchen. The Mountainside Patio offers "picturesque alpine views" while the Private Dining Room provides a more intimate dining experience. Reservations are accepted for all room for private functions such as weddings. Patrons also have the option to sit at the Chef's Table which is designed to accommodate six to eight people. Reservations for this must be done at least two days in advance because menus are made specifically with a patrons likes and dislikes in mind.
