The basic elements of Mexican cuisine, which give it its unique flavour and texture are maize, red meats, and the enormous variety of hot spices, beans onion and tomato. The national dishes are known as platillos mejicanos. Basic ingredients of the traditional sweets are cane sugar, piloncillo or unrefined sugar, fruit pastes and various plant seeds.
