Blue Coyote Restaurant, in Palm Springs, with others in the Desert Cities area, offers innovative Mexican food in relaxing surroundings. Eat either inside in the casitas or the garden patio - shaded by trees during the day that sparkle with tiny lights after dark. There is live music and displays of flowers, cacti and succulents, with fountains and Mexican-inspired art. Established in 1992 the restaurant has a reputation for high quality Southwestern and Mexican cuisine, and its signature Wild Coyote margarita.
