Fiorella's Jack Stack Barbecue of Martin City was established in Kansas City in 1974 by John Fiorella. He had previously worked for Smoke Stack Barbecue - a traditional storefront-restaurant owned by his father.
Fiorella started cooking with gourmet hickory wood, and created an extensive menu selection that included Angus Beef steak, lamb ribs and fresh seafood. The restaurant is also renowned for its Hickory Pit Beans and Cheesy Corn Bake. Today the company is still a family business - Fiorella's son and son-in-law are now partners. The company has a portfolio of four restaurant, the original eatery at Martin City, Overland Park, the Freight House, and the new Country Club Plaza.
The lunchtime menu features 'Burnt End' , Fresh Fish or BBQ Combo lunch plates. Salads are dressed with a choice of the restaurant's signature dressings including Ranch, Bleu Cheese and Creamy Italian. There's a great selection of sandwiches, hickory-grilled chicken and the hickory-roasted barbecue. The restaurant's signature dishes include the Crown Prime Beef Short Ribs, and Hickory Seared Rack of Pork. There's also a selection of Certified Angus Beef steaks and seafood cooked over hickory fires.
There is a fully stocked bar with cocktails, specialty beers, liquors and a fine wine selection and the the restaurant offers complimentary desserts for birthday parties. The company has a full carry-out and catering service catering for small occasions to full-blown events catering for over a thousand guests. The Freight House has a full-service outdoor patio, and at Martin City the outdoor seating area is available for drinks and appetizers.
