Buffalo Wallow Chili Cookoff in
Custer State Park, offering a variety of chili made fresh from Buffalo meat, is an exciting and unique event ready to satisfy the cravings of competitors and tasters alike!
The Buffalo Wallow Chili Cookoff, an annual event first held in 1990, gives contestants a chance to show off their culinary skills and secret recipes by creating the best chili from eight pounds of bison meat, provided by the Area Chamber of Commerce. More than thirty chefs from around the region compete for The Best Chili in the Region. Criteria for the contest includes texture, flavor, smell, showmanship and blend of spices.
The Chili Cookoff is held the day before the celebrated buffalo roundup, part of the Black Hills Autumn Expedition. Not only do competitors get to cook, but they come ready to participate in different themed costumes. Some themes in past competitions include The Beverly Hillbillies, The Witches and even political Republican and Democrat themes.
